A Change for Veggies and Pasta

I love cooking fresh veggies in season!  However, we all know that sometimes we need a little imagination to create something different.  So here goes……….  cook a 1/2 box of pasta (I use Penne).  Set aside.  Here’s the veggies I used but you can use whatever you like and improvise.   Cook one small zucchini with 4 cloves of garlic in two tables of olive oil in a fry pan on medium to high heat.  Once that is almost done I add a bag of fresh baby spinach.  ( Don’t worry the spinach cooks up to nothing).  Remove from heat.  Mix 1 cup of medium salsa ( I use Old Goat Medium Salsa made by Szarek’s ) with 1/3 cup of Mean Dawg’s mustard.   Mix the pasta, veggies, salsa mixture and 1 cup of shredded cheese ( I use Colby jack).   Also add 6 to 8 cherry tomatoes cut up to the mixture ( you can also use a medium tomato cut up if you don’t have cherry tomatoes).  Place in a greased casserole dish.  Bake at 350 degrees for 30 minutes.  Check the dish, if its bubbly, it’s done.  To add extra “meat” to the dish, add 1/2 lb. cooked hot Italian sausage (Drover Hill Farms tastes great!)
